Your niche really just means your specialty – the kind of work you want to do, and what you want to be known for. It can include a style, a type of cake you make, a specific clientele you are targeting, or a combination of several things.
It’s your business and your livelihood. Make it whatever YOU want it to be.

Vegan Cakes
There aren’t a lot of good vegan bakers out there, so if this is your thing and you have some kick-ass recipes, get out there and make a name for yourself!

It feels like everywhere you turn people have gone gluten-free. Those people still want cake, and most of them remember what regular cake tastes like. Show them what’s possible!
Allergen-Free Cakes
When I was a child, food allergies were rare, however those days are long gone. Nowadays, tons of people have allergies and sensitivities (including myself) and they also want to be able to enjoy a good cake.
Kosher Cakes
There are strict religious rules regarding the production of kosher cakes, however there is definitely demand for people who can make a good kosher cake, and not just in the big cities.
Carved Cakes
People love cakes that look like something else and television cake shows and challenges have fueled demand for this speciality. If you are good at molding and sculpture, carved cakes might be your jam!
Topsy-Turvy Cakes
I personally hate these because I’m all about symmetry, but stacked cakes that look like they are about to fall over are very popular. They even make sets of pans that make this super easy.

This is my niche. I am obsessed with sugar, or gum-paste, flowers. Cakes that have them look so pretty imho! These command some of the highest prices because of the amount of time and the level of skill that goes into making them.

If you like to play with food and want people to get a kick out of your designs, specializing in this niche is for you. Have fun and see those smiles.

If you like to work on large, elaborate cakes, this might be the niche for you. People with big weddings want to choose someone who they know can accommodate them, which not everyone has the capacity or equipment to do.
